***Stuffed Fillet with Pepper Crust***

The time has finally arrived for our first recipe to appear on our site in honor of our Heritage/National Braai day Recipe Run.

This recipe was done by Eric-John Estment, our Sales Manager.

What you will need:

  • Feta Cheese
  • Lemon Pepper SPICE mix
  • Worcester sauce SPICE mix (not liquid)
  • Big teaspoon garlic
  • Generous sesame seeds
  • Coarse black peppercorns (preferably freshly pestled and mortared pepper corns)
  • Fresh rosemary
  • Sage and other fresh herbs to taste
  • Olive oil
  • Fillet steak.
  • Netting


Mix the lemon and black pepper, Worcester sauce spice, garlic, sesame seeds, rosemary and sage together.

Slice the fillet open, stuff with feta cheese and close it up.

Stuff Fillet with Feta Cheese

Wrap the fillet in netting.

Baste the wrapped fillet with olive oil.

Roll the fillet in your spice mix and refrigerate for at least 30 minutes.

Place the fillet in a barbeque grill, braai to taste (rare/medium/well done) and enjoy!

Eric suggests serving this dish with fresh green salad and creamed spinach over rye bread toast triangles.
